Anyone who has ever grown a zucchini squash plant in his vegetable garden knows what happens when he turns his back for a few minutes during the hot summer days ... GIANT zucchinis. After giving one or two away to everyone he knows, the gardener will most likely still have several of the monster vegetables on his hands. Time to dust off the trusty food processor and get busy shredding zucchini to stash in the freezer for the winter months.

Shredded Zucchini to Freeze and Use Year Round

Fresh zucchini should be scrubbed under cold running water with a vegetable brush. There is no need to peel this veggie, although damaged or scarred areas may be pared away. The chef should slice off the ends of the zucchini, cut it in half between the ends, then cut the two halves lengthwise in pieces that will be easily accommodated by the food processor.
