Delicious desserts are part of German food culture. Eating 'Kaffee und Kuchen' is a traditional afternoon pastime when specialities like 'Schwartzwaldkirchentorte', Black Forest Gateau, are eaten with relish. Coffee shops and cafes are welcoming but these desserts can also be made in the home.
This flan recipe is straightforward to make but the flan base ingredients need to cool in the fridge for an hour before being moulded into the flan case.
Once the flan case is cooked, by baking blind, then it also needs to cool before filling with the berry fruit mixture.
Baked Fruit Flan Recipe

Flan base ingredients
- 250 g flour
- 125 g butter
- 125g sugar
- 1 egg
Flan preparation
- Mix all the ingredients together and leave them in the fridge for one hour. Grease a loose-bottomed 9 in flan case. Roughly roll out the pastry and then spread it out by hand in the bottom of the flan case, gently moulding it into the shape of the flan case.
- Cut greaseproof paper larger than the flan case and grease one side. Then place it on top of the pastry with the greased-side down.
- Next put dried peas or dried beans on top of the greaseproof paper to stop the pastry lifting whilst cooking.
- Bake blind on 160 C degrees for 15 minutes.
- Allow the flan base to cool.
- Next prepare the filling.
Filling ingredients
- 1 cup of milk
- 1 heaped tablespoon of flour
- 200g of sugar
- 3 eggs
- 1 cup sour cream
Strawberries, raspberries, redcurrants are recommended but any berry fruits can be used, especially if they are in season.
Filling preparation
- In a saucepan mix together one cup of milk with a heaped tablespoon of flour and 200g of sugar. Cook this mixture over a low heat, making sure it is stirred all the time.
- Leave the mixture to cool.
- Then mix together 3 egg yolks with a cup of sour cream.
- Whisk 3 egg whites and then add the sour cream mixture.
- Now mix all the ingredients together.
- Line the bottom of the flan case with red berry fruits-slices of strawberries, raspberries and redcurrants or any other berry fruit of your choice.
- Then pour the ingredient mixture over the fruit base and bake the flan in the oven at 180C – 200C degrees for 45 minutes.
- It can be eaten warm but is best served cold.
- Serve with a little sour cream, fromage frais or full cream.
It is ideal for all seasons and all occasions from a dinner party or a summer buffet to parties throughout the year or celebrations at Christmas time as it can be made in advance if served cold.
