Pork tenderloin is a common meat served. It can be prepared in less than 2 hours and goes great with a wide range of food ingredients. Some of these ingredients include brown rice, red potatoes, asparagus and corn.
Here are two recipes, including apple-cranberry pork tenderloin and rosemary pork tenderloin:
Apple-Cranberry Pork Tenderloin
Serve: 6 to 8
Ingredients:
- 1 Tbsp. extra virgin olive oil
- 2 lbs. pork tenderloin, trimmed of all visible fat
- 1 tsp. ground black pepper
- 1 cup diced, red onion
- 1 cup chopped apple
- 1 cup cranberries
- 1 cup plain chicken broth
Directions:
- Preheat the oven to 450 F.
- Coat a baking pan with cooking oil.
- Use a large skillet to heat the extra virgin olive oil over high heat.
- Gently add the pork tenderloin and sprinkle with black pepper.
- Make sure the pork tenderloin is browned on all sides ,which takes 2 to 4 minutes.
- Remove from heat and place in the oiled baking pan.
- Allow the pork to roast for about 20 minutes and check with a food thermometer.
- While roasting the pork tenderloin, combine the red onion, chopped apple, cranberries to the large skillet.
- Saute over medium heat until the onions and apples are soft.
- Stir in the chicken broth.
- Turn up the heat and boil until the sauce has reduced (approximately 5 minutes).
- Place the pork tenderloin on a platter.
- Slowly pour the onion-apple-cranberry mixture over the pork.
- Serve to guests.
Rosemary Pork Tenderloin
Serves: 6 to 8
Ingredients:
- 2 Tbsp. extra virgin olive olice
- 2 lbs. pork tenderloin
- 3 Tbsp. spicy mustard
- 1/4 tsp. salt
- 1/4 teaspoon pepper
- 1/4 cup spicy mustard
- 1 Tbsp. extra virgin olive oil oil
- 2 Tbsp. cider vinegar
- 1/4 cup brown sugar
- 1 teaspoon crumbled dried rosemary
Directions:
- Use a large ovenproof skillet and heat the first 2 tablespoons of extra virgin olive oil over medium heat.
- Make sure any excess pork fat is trimmed.
- Combine rub ingredients by stirring together the spicy mustard, salt and pepper.
- Gently rub the mixture over the pork tenderloins.
- Place pork tenderloin in the hot skillet and brown on all sides.
- Remove from skillet and transfer to the oven.
- Roast, uncovered, for 25 to 35 minutes.
- Remove pork to a serving plate and tent with foil.
- In a small bowl, combine 1 tablespoon of extra virgin olive oil, cider vinegar, brown sugar and crumbled rosemary and mix for 2 to 3 minutes.
- Add the olive oil-vinegar based sauce to the skillet and boil over medium heat. Simmer.
- Slice the pork and serve with the olive oil-vinegar based sauce.
Remaining pork tenderloin should be placed in the refrigerator immediately after meals. This helps prevent the tender meat from drying out. Homemade sauces give pork tenderloins enhanced flavor.
