One of my favorite dishes from childhood was homemade pierogi. This delicious food made with potato and cheese is very filling, and very delicious. Unfortunately, I am not known for my culinary skills. Making homemade pierogi requires rolling out dough, which I just don’t see myself doing. Luckily there is a great runner-up recipe to pierogi that is fast, easy, and still sure to please. I present to you, the pierogi lasagna!

Lasagna Ingredients

  • 12 cooked lasagna noodles
  • ½ block of cubed Velveeta Cheese
  • 5 cups of hot mashed potatoes (See recipe below)
  • 1 stick of butter
  • 1 cup sliced sautéed onion

Directions for Pierogi Lasagna

  1. Preheat oven to 350 degrees.
  2. In a large pot, combine the mashed potatoes with the cubed Velveeta Cheese. Place the mixture on low heat and stir until cheese is melted completely into the potatoes. Be sure and mix well while heating so the potatoes do not scorch on the bottom.
  3. In a 13x9 pan, grease the bottom and sides with some of the butter. Lay three cooked noodles side by side on the bottom of the pan. Place a thick layer of the cheese and potato mixture on the noodles. Repeat this process until all of the noodles are used. Do not place a layer of cheese and potato mixture on the top layer of noodles.
  4. Slice several thin sections of butter on the top layer of noodles. Cover the pan with aluminum foil. Place the pan into the oven and cook for 45 minutes at 350 degrees.
  5. When the lasagna has about 5 minutes left to cook, melt the remaining butter into the cooked onions in the microwave. When the lasagna has finished, take it out of the oven and serve with the butter and onions. Some also enjoy a bit of sour kraut and sour cream on top of their pierogi lasagna.
  6. There really is no substitute for the real, homemade goodness of an authentic pierogi recipe. Fortunately for those of us that lack a certain amount of culinary prowess, this recipe for pierogi lasagna satisfies our need for the real thing. Feel free to experiment with other toppings and fillings like those mentioned above.

Recipe for Mashed Potatoes

  1. Peel and cut 5 to 6 large Idaho potatoes
  2. Boil until tender
  3. Smash the soft, cooked potatoes with a potato masher.
  4. Add just enough milk to the mixture to make it smooth. It is also acceptable to mix in a dab of sour cream to add some flavor.
  5. Add salt and pepper to taste, if desired.
